  • A Night in India

IT IS easy to underestimate the power of good service.

A moment of well-aimed attention can make a dining experience before the menus have even hit the table. And it doesn’t need to be anything special – a friendly greeting, some easy chatter, and an eye for a near-empty glass. It’s deceptively mood altering, putting a sheen on all the other bits and pieces. Rupinder Sahota works his own brand of service magic at A Night in India. He is an affable, easygoing chap, not to mention observant. There is a simple formula for making me a happy diner, and that’s to see the approach of an empty glass or the need for an extra plate before I do. I’ll forgive a lot for that little luxury.
