Andrew graduated from Churchie in 1979 and went jackarooing, encouraged to do so by his father, a towering figure in the Queensland wool industry. "I got thrown off a horse before dawn every day for a month," he says, wincing at the memory.
His bush sojourn was intended to be for just one character-building year before he went to uni. But Andrew is still there beyond Cunnamulla, drawn Voss-like to a nirvana of nothingness. In the remote corners of this state he has discovered what he regards as the quintessential Queensland cuisine, often cooked on a wood stove by a grazier's wife in a blue floral frock. Shins and necks, offal and ribs - nothing wasted. Whole roasted shoulder of mutton, poached brains, corned beef, lamb curry and bullocks' hearts, not to mention poultry and pigs. "Nothing at all like restaurant tucker," said Andrew. We had gathered at Blue Smoke BBQ at New Farm in inner-city Brisbane to sample what is said to be another authentic dining experience, this time Southern Americanstyle. Following in the footsteps of its famed New York namesake, this is the only place in Brisbane where you can get an American barbecue smoked in-house. Among Steve Curry’s offerings are the buffalo chicken wings with blue cheese and celery, hickory-smoked Texas beef barbecue ribs; and spinach and artichoke dip with tortilla chips, sour cream and salsa. Even the Seattle-style salmon is smoked on site. The big flavours sit comfortably in an attractive cornflower-blue setting with dark wooden tones.
