MARK Maric is a chef with a respected name and a stellar resume.
In Brisbane, he forged the reputation of Lure at The Coro, and more recently he was at the helm of the kitchen at Cloudland. He also has done time with the likes of Neil Perry and with a few heavy hitters in the US. In short, he is a proven cook with both skill and imagination. Knowing that, I’m a little disappointed after checking out his new Teneriffe bistro, Dish. Perhaps it’s a case of exaggerated expectation, but I reckon it’s a decent restaurant that has not yet found its feet.

MARK Maric ran Neil Perry's catering company during the 2000 Sydney Olympics before moving to Brisbane in 2004.
He was the opening chef at Lure at the Coro, a seafood-oriented venue employing striking oriental notes that underpin Perry's food style. Recently he completed a brief stint behind the burners of Cloudland before opening Dish, his new bistro opposite Beccofino in Teneriffe. Muted tones and a simple fit-out fronts a small bar and even smaller kitchen but Mark gets around this by keeping the menu simple and importantly, small.
