Oscillate Wildly in Newtown was originally envisaged as a quiet back street bistro but the word quickly spread and this small restaurant has become extremely popular. There are only 28 seats and it is booked out around two months in advance, but you can also try your luck by putting your name on the cancellations waiting list. The cuisine is contemporary Australian with South American influences, and as well as the a la carte menu there is an 8 course degustation. It was awarded One Chef's Hat in 2007, 2008 and 2009.

    Quite simply this was a heavenly dining experience! We had the degustation (maybe this is all they offer now?!) and it was divine. Each wee dish was a mini-masterpiece of exquisite morsels. I can't remember the exact names of the all the dishes, but the scallops were cooked to smooth & silky perfection. The staff are great, with such an amazing knowledge of the food & the huge variety of unusual boutique wines. We chose a Tamar Valley wine, which can only be described as Bruny Island oysters in a bottle (in a clean crisp, ocean kinda way!) Atmosphere is like a lovely old style French bistro complete with black & white floor tiles & candlelight.
    Highly recommended if you can get in! We actually managed to come up trumps on the waiting list;-)

    Oscillate Wildly has all the great parts of fine dining without any of the drawbacks - no snootiness, only friendly service.
    Brilliant, clever food - but you can BYO and it's $95 for degustation, so it's a lot 'cheaper' than other restos offering the same at a steeper pricetag.
    It's a warm room - intimate and cosy, it doesn't fall for that designer steeliness other places go for.
    Also they managed to accompany our dietary trickiness (a vegan diner plus a vego one) with flair and panache.
    Sure it's hard to get a booking, but everyone in Sydney should try to eat here at least once.

    Great food and a genuine warm welcome from this gem in the heart of Newtown. They only seat around 30 so you need to book about 3 months in advance - but it's well worth the wait. At $55 for 3 courses too, it's the best value quality restaurant for miles around.

    A precocious talent takes bistro dining to giddy heights.

    Josephine Pignolet was an instinctive cook whose legacy continues 20 years after her untimely death, through the annual young chef's award that bears her name. Her former husband, Bistro Moncur's Damien Pignolet, Neil Perry and Janni Kyritsis, encourage a chef with a talent and passion that embodies Josephine's spirit. The recipient is sent overseas to work alongside the best, then brings those skills back to Australia. Over the past 18 years, they've chosen well: Tim Pak Poy and Mark Best count among the alumni and now the precociously talented Daniel Puskas, the 2006 winner, follows in their wake. His debut at the petite bistro Oscillate Wildly, aged just 24, is a moment to mark. In years to come, dining here will be like claiming you saw the Beatles play at the Cavern Club in Liverpool.

    The queues have gone but Oscillate Wildly is now an even better restaurant.

    THE times, they are a-changing. A year back, it was a toss up between Tetsuya's and Oscillate Wildly for where it was hardest to get a table. The wait was months. It wasn't the only thing the established monarch and young challenger had in common, even though the two experiences were worlds apart. I doubt you'll ever hear the Velvet Underground's eponymous 1968 album at Tetsuya's. Distorted guitar isn't a three-hat soundtrack, however it captures the flavour of funky, grungy Newtown. Like the Velvets, this petite Newtown shopfront - it seats just 28 - has a cult following. However, Oscillate Wildly has changed dramatically since my last review 30 months ago. The simple bistro decor, with its chequered tile floor remains but last year, the kitchen retooled to an eight-course degustation menu and doubled the dinner price. Two precocious young chefs, Daniel Puskas and James Parry, were keen to flex their culinary muscles. That chutzpah was rewarded.

    Hugely talented young chef Daniel Puskas is on the next stage in his culinary journey, introducing an eight-course degustation. Prices have doubled, but it?s still decent value and this cute shopfront restaurant continues to be booked out months in advance.
