The chef's instincts and good waiters strike the right note.
Venice is famous for its champagne and salmon roe. I didn't know this but it seemed the logical conclusion to being told that Venetian oysters were dressed thus. No wonder Casanova had such a good time. The dish had its first 15 minutes on Otto's menu a few years back. Rocket's chef Wayne Rowe took note and has subsequently staged their comeback. I'm not a fan of fiddling with Sydney rock oysters beyond opening them but I'll concede ground in this instance, since the champagne vinaigrette's genial acidity is a fine complement to the creamy richness of these Port Stephens bivalves along with the pop of the Yarra Valley eggs. Natasha, our omnipresent waitress, proposed a solution to our curiosity by including a trio of the Venetian version alongside the balance of our half-dozen ($18) in their natural state. That eager-to-please approach is part of what makes this northside fine diner so likeable. Sheer effort overcomes any shortcomings in personality. Rocket is the very mode...
