IF CHEF Alex Bourdon looks familiar in the open kitchen as you head towards the backroom bar, it's probably because he was once your waiter.
French-born Bourdon has patrolled the floor at Bambini Trust and, more recently, Rocket, in Chatswood, along with his Australian-born wife, Natasha. When they decided to strike out on their own, he returned to his first love, cooking. We're all the better for it, judging by the moules farcies ($16/$24). The entree-sized version of this Provencal dish involves a dozen half-shell mussels, crumbed and lubricated with garlic butter, in what Natasha likes to call their version of escargot. It's a lovely combo: the bivalves are plump, slippery and moist, with a bit of crunch and funk.
