Lovingly nestled at the entrance to the revamped train station Newtown’s latest culinary hotspot Cuckoo Callay is once again taking things to the next level with the inaugural Bacon Brewfest.
Hot on the heels of last year’s festival of porcine delights, this year the Bacon Brewfest sees Cuckoo Callay teaming up with the very best gourmet minds, including Black Star Pastry, The Stinking Bishops, Aqua S, Mak Mak Macarons, n2 extreme gelato, Tsuru Food Truck, Burgers by Josh, and Mr Bao to bring you a showcase of all things bacon.
There’ll be plenty of drinks on offer to quench bacon-created thirsts with craft beer tastings from some of the best craft breweries Australia has to offer, including 4 Pines, Feral Brewing Co, and Willie the Boatman, and a festival bar curated by the expert barmen at Ramblin’ Rascal Tavern.
We spoke with some of the good folks who’ll be appearing at Bacon Brewfest to find out what we can expect!
Can you tell us a bit about yourself?
Cuckoo Callay, nestled in Newtown Station, is a labour of love from locals Ibby and Ella, priding itself on perfect coffee, delicious food and friendly service. We launched Australia’s first ever Bacon Festival in 2015 and sold over two tonnes of bacon, and are doing it all again this year! – Cuckoo Callay

What will you be serving?
Our favourite ‘I Scream, Bacon!’ A bacon and ice cream combo that’ll have you screaming for more! – Cuckoo Callay
We’ll be serving a variety of our famous pulled pork and crackling rolls. One of our specials will be the HOGZILLA: a half baguette stuffed with our slow-roasted pulled pork, smoked bacon, homemade slaw, spicy dill pickle, Monterey Jack cheese, slathered in our famous Pig Baron BBQ sauce and topped with thick crunchy crackling. We have invented two flavours just for Bacon Brewfest, which are BACON and BEER flavoured soft serve, with grilled marshmallow and popping candy as your choice of toppings. They might sound very strange, but we assure you they are able to satisfy your taste buds, and this is exactly what Aqua S offers – innovative, special and unique flavours that you won’t be able to find elsewhere! We will be serving our infamous TACO beer. A Mexican inspired beer brewed with fresh lime zest, coriander and flakes of corn! – Two Birds Brewing
What are you looking forward to the most?
Seeing it all come together after working hard to bring Sydney its biggest bacon celebration ever, but also showcasing free range Aussie pork and encouraging everyone to eat local and support our farmers. – Cuckoo Callay

If just one day of bacon and beer-fuelled gustatory wonder just isn’t enough, don’t despair because Cuckoo Callay will keep the good times rolling with their special pork-tastic bacon menu running for 12 weeks after the festival. What’s more, if last year’s menu is anything to go by (they had a popcorn chicken and beer-candied bacon burger called ‘Don’t Go Bacon My Heart’), we can’t wait to see what’s on offer.
