Tucked away behind an unassuming exterior, South Seas Cocktail Lounge is like having your very own secret island retreat. Inside, it’s a pleasing cross of Polynesian fittings and classic American camp, and the fellas behind the bar are some of the friendliest you’ll ever meet. Try their signature blend, the South Seas cocktail. It’s made of rum, coconut, vanilla and lime, and comes in a ceramic coconut!

This 80s-style tiki haven knows its cocktails, and it knows them damn well. In fact, the barmen of Birdcage could mix you a Manhattan out of nothing but tap water and elbow grease, with enough left over for shots and a round of jagerbombs (that’s what we heard anyway). At any rate, we suggest you go for the ‘410’ Punch, with Captain Morgan, peach, Cointreau, lime, passionfruit, pineapple, cinnamon sugar and ginger beer.

Although it’s not your typical tiki bar, we still love visiting IXL Long Bar because of the absolutely delicious cocktails that they always come up with. In particular, the Daiquiri No.3 is a triumph of mixology, starring Carta Blanca rum, lime, sugar, maraschino liqueur and fresh grapefruit. Delicious!

A bright, spacious and beautifully modern venue with a flair for fresh seafood, Pearl + Co definitely brings us over to the swankier side of Hobart cocktails. The harbour views are gorgeous, the bar is brimming with top-shelf spirits, and the whole place simply shimmers with class. You haven’t had a margarita ‘til you’ve had one here, so you should probably get on that!

Gothic-tinged Mexican powerhouse Pancho Villa is no slouch in the tropical cocktails department. You can find yourself some rather lovely bevvies amidst the skulls, chandeliers and dark brick walls that make this place so striking, not least the mighty La Pina Grande. It’s comprised of white tequila, rum, lime and coconut, and comfortably serves two people. Great for date night!
