This is where it all began, in 1992 - bills Darlinghurst with the miniscule kitchen and tiny dining room in an old backstreet pub building, serving just a blackboard-menu breakfast and lunch; setting the tone for what bills still does today. Local by-laws allowed only a few seats, hence the now much-copied communal table where everyone eats together, reading the newspaper or striking up a conversation with the person enjoying scrambled eggs next to them. Long wait but worth it. The scrambled eggs are delicous

Visited here on the weekend for breakfast. Put our name and number down on arrival. Wait was 20min or so and we received a text when table was ready. Genuine friendly service is lacking as staff is buried head deep in iPads which is a shame. Food was good and consistent. Scrambled eggs fluffy and delicious. Coffee was great and hot. Will be back.

This is the original bill's, still going strong, it is said that he started the trend for communal dining at this Darlo institution. You must have the signature brunch dish of the ricotta hot cakes with honey comb butter,
Not cheap but not bad value either. They are light and fluffy and presumably the ricotta in them is loaded with protein so they really fill
you up. Even the hot chocolates are way way better than your standard hit choc, they melt the chocolate and somehow line your glass with swirls of it, and it's not just a powder,
It's true chocolate .
Must -do thing in Darlinghurst. Brunch queue can be long so get in early.

Greatest brekky meals here. Their pancakes are so good. Make sure you get in quick because it's always packed out but it's so worth the wait

Love the ricotta hotcakes, no one makes them as good as Bills and I have tried a few in my lifetime. Love the marscapone honeycomb butter! The fritters are also good. Queues can be long on weekend mornings.
